Whole30 Day 21 – This Garlic Cauliflower Fried Rice is buttery and garlicky and is the perfect side dish for any meal. It is packed with vitamin C, vitamin K, iron, folate, pantothenic acid, and vitamin B6.
I’ve been missing rice lately. This cauliflower fried rice is a great alternative to the starchy grain. It’s so easy to make that I’m shocked to see them at the stores in a bag next to the produce section and in the frozen aisle. I guess you pay for convenience but seriously grating a head of cauliflower takes 5 – 10 minutes at most. I’ve never bought cauliflower rice so I can’t speak for the taste but I know my cauliflower rice is fresh since I’m the one that grated it. If you have a box grater, you’ll want to make your own or if you have a grater blade on your food processor it works just as well.
I like my cauliflower rice sautéd in butter with fresh garlic. It’s how my parents made it when I was growing up and I wouldn’t have it any other way. It’s so simple and buttery delicious. This cauliflower is just like rice and you won’t miss the real thing.
Garlic Cauliflower Fried Rice
- 1 head cauliflower
- 2 tbs ghee
- 3 cloves garlic
- salt and pepper to taste
In a large bowl, place the box grater. Grate the cauliflower using the large holes
Heat a large skillet over medium heat. Add ghee and let it melt.
Add the garlic and sauté until fragrant
Add the cauliflower and sauté until tender
season with salt and pepper to taste
garnish with cilantro (optional)
