Whole30 Day 15 – Giniling Guisado (Filipino Ground Beef Stew) is my comfort food. This dish is one of my favorite dishes growing up. Its a tomato stew with ground beef, potatoes, carrots, raisins, and peas and it’s absolutely delicious. This is best served with cauliflower rice to soak up the flavors.
Happy Martin Luther King! Today is the day when we celebrate Martin Luther King, Jr’s life and his dedication in fighting racial inequality. It’s mind-boggling to think of a world of racial inequality where the skin of our color separates us but it still exist today in different parts of the country and in different parts of the world. We are all human beings and we must treat other like so. We have come a long way but we must still fight for inequality.
I had the day off today which meant sleeping in, hanging out, and preparing for the work week. I had a brunch date with my former colleague whom I haven’t seen her since I left the employer where we worked at but we text and talk on the phone daily so it’s like I see her practically everyday. She’s awesome and I miss her and my former University Relations Team.
After brunch, I went to pick a TV from my former colleague who’s moving to Boston to be with her fiancé. I don’t know why I need another TV since I already have one in my living room and my place is only 650 square feet but for the right price, I’ll take it. It’s going in my room since II fall asleep while watching the news. I tend to wake up in the middle of the night with a neck strain stumbling to my bed.
I should have worked out today but I didn’t. I danced my ass off yesterday at U-Jam and I can feel my quad muscles as I walk. It’s a good pain. There was an 8:30 pm Zumba class at 24 hour fitness but it’s a late class. I could have gone but I’m planning my workout for the week since I signed up for Class Pass. I was going to renew my membership at Pure Barre in Palo Alto but I’m the type of person that gets bored with workout routines so Class Pass is awesome. I signed up for the 2 week introductory offer and I’m loving the concept of having points to use. I received 48 points for 2 weeks. Each class ranges from 2 – 8 points. and you can chose from barre, pilates, yoga, strength training, dance, martial arts, etc. There are so many classes to choose from and I can’t wait to try them all.

For tonight’s dinner, I wanted to go back to my childhood and make one of my favorite dishes which is ground beef in tomato sauce with potatoes, carrots, raisins, and peas. This is so simple to make and quick as well. This dish is so delicious with rice to soak up all the deliciousness.
- 1 tbs of ghee
- 1 onion, diced
- 2 cloves of garlic, minced
- 1 lb of ground beef or pork
- 1 15 oz of tomato sauce
- 2 tbs of tomato paste
- 1 cup of water or chicken stock
- 2 bay leaves
- 1 medium potato, diced
- 2 carrots, diced
- 1 bell pepper, diced
- 1 cup of peas (fresh or frozen)
- salt and pepper to taste
- Heat oil over medium heat on a large skillet
- Add the garlic and sauté until fragrant
- Add the onions and sauté until translucent
- Add the ground beef and cook until brown, breaking up chunks of meat
- Add the tomato sauce, tomato paste, and chicken stock, and stir
- Reduce heat to simmer and add the potatoes. Cover the skillet and cook the potatoes until tender, approximately 15-20 minutes
- Season with salt and pepper
- Add the raisins, bell pepper, and peas, and cook for 5 minutes
- Serve with cauliflower rice or rice to soak up the juices
