Whole30 day 22 – Thai Green Curry Chicken. I’m truly in love with the flavors of Thai Curry. The combination of green chilis, shallots, lemongrass, garlic, galangal, kaffir lime peels, cumin, corriander seeds, and tumeric are just the perfect blend of flavors. It awakens all your senses and you keep wanting more.
I don’t typically workout on Mondays so it’s game on when it comes to Tuesdays and today, I’m ready for barre class at Barre Method is Sunnyvale at 7:10 pm. I like this studio because the women come in all shapes compared to the other studio that I go to. The other studio is filled with women who are ballerina perfect with their expensive lululemon leggings. It still kills me that no one talks to each other at these barre classes. I guess I got used to crossfit where people actually say hello and make small talk. Crossfit is truly a community and I miss that part. The coaches make an effort to get to know your name, encourage you, and make sure you reach your full potential. One of these days, I may go back to NC Fit but for now I like the flexibility of attending various studios.
I like ClassPass but I wish I wish there were more studios in my area that participated in it. I’m having to drive to studios within 10-15 miles and I sometimes wonder if it’s worth it. It might be more beneficial to attend one studio so that you get to know the people and the instructors can get to know you. The main reason why I signed up for ClassPass is because I didn’t want to pay a monthly membership to one studio where I can go to multiple ones in a month. My schedule tends to be sporadic nowadays so I may not make to the home gym.
I park in Palo Alto to catch the Cal-Train and it just happens there’s a row of studios from CrossFit, pilates, and barre. Instead of being stuck in traffic for an hour, I workout and drive home for 15 minutes.
For dinner, Thai curry has been my go to dish lately. It’s quick and easy and having a tub of Thai green curry paste makes it a breeze to make curry any time. I still have yet to try making this at home and I will make it one of these days. I have a very old Thai cookbook nestled in my bookcase and I’ll dust it and attack very soon.
A few table spoon of this Thai curry paste is all you really need, add more for an extra kick but for me two table spoon is all I need for 1 can of coconut milk. The sauce is amazing and I can just have the sauce with my cauliflower rice to soak it all up.
I love this dish because it’s easy, full of flavor, and delicious.
Thai Green Curry Chicken
- 4 chicken boneless thighs 1 inch cubes
- 2 tbs green curry paste
- 2 tbs coconut oil
- 1 can 14 oz coconut milk
- 1 juice of lime
- 1 bunch thai basil leaves
In a large skillet, heat 2 tbs of coconut oil
Add the chicken and sauté until golden brown. Set aside on a plate
Add the curry paste and sauté until fragrant
Add chicken broth. Scrape off the bits of the bottom of the pan
Add the coconut milk and return the chicken to the pan
